You can grow a volume by using tunefs.ocfs2, currently the volume can't be mounted during this operation (at least for ocfs2 1.2). I have done it and it is usual a fast operation.

Yes, you can have multiple volumes. You pretty much follow the instructions, only the first steps are not needed (cluster.conf, etc.).
Present the new volume to the systems (like the LUN from the shared SAN), run fsck.ocfs2 on it (or use the console) and mount it on both.
